Beetroot Burgers
This recipe makes 6-8 burgers depending on the size of your patties.
Ingredients
500g Cooked White Potato (leave skin on)
160g Beetroot
120g Cooked Quinoa
60g Finely Grated Carrot
60g Red Bell Pepper
1 Small Chopped Red Onion
40g Fresh Spinach Leaves
3 tsp Ground Cumin
2 tsp Ground Ginger
2 tsp Ground Smoked Paprika
2 tsp Pureed Garlic
1/4 tsp Black Pepper
Recipe
1) Pre-heat the oven to 180C/350F.
2) Place all ingredients into food processor and blend until fully combined and the mixture comes together well.
3) Spoon out a large handful of the mixture and shape into a ball. Place the ball of mixture onto a non-stick baking tray and flatten out into a pattie with the back of a fork. If your mixture seems far too wet to start shaping into patties, then add a tablespoon of flour (any kind) to the blender and mix further. Keep doing this a few times until the mixture seems a little more solid.
4) Complete making all patties and place in the oven on the tray for 25 mins. Turn your burgers over and continue to cook in the oven for another 25 mins or until the outside is crispy.
5) Remove from the oven and place your burgers in a whole-grain bun with various salad options such as tomatoes, avocado, lettuce, gherkins, pickled onions etc. You can also add a healthy homemade burger sauce or other condiment of your choice - see my dressings, sauces and condiments recipes for ideas.
Top Tips
If there are any ingredients that you do not like in any of my recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen veg when you don’t have the fresh option.
Don’t forget to keep the skins on your fruit/veg to reduce waste and for essential added fibre and nutrition. Try to compost anything you don’t use.
