Chickpea Tagine
800g Cooked Chickpeas
1 Courgette
200g Mushrooms
1 Small White Onion
30g Sultanas (or alternative dried fruit such as apricots or raisins)
1 tbsp Pureed Garlic
1 tsp Ground Turmeric
1 tsp Ground Cinnamon
1 tsp Ground Cumin
1 tsp Ground Ginger
1/4 tsp Ground Cayenne Pepper
Recipe
1) Finely chop the onion and then chop the courgette and mushrooms into chunky pieces.
2) Place onions, garlic, all of the spices and 100ml water in a pan on the hob. Cook on a medium heat and stir until the onions, spices and water create an aromatic paste.
3) Add all other ingredients and stir until all of the veg and chickpeas are coated in the paste. Add another 100ml water and cook on a low-medium heat until the courgette and mushrooms are cooked to your liking.
4) Enjoy your chickpea tagine with some whole-grains such as brown rice, wild rice, quinoa, buckwheat, bulgur or a fresh salad.
Top Tips
If there are any ingredients that you do not like in any of my recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen fruit/veg when you don’t have the fresh option.
