Citrus infusion with beetroot & rainbow peppers

Buddha Bowls are so quick and easy to make, they are the perfect lunch or dinner to have at home, as well as to take out with you on the go - for work, picnics, packed lunches etc.

Ingredients

Nutritional Yeast
Lemon/Lemon Juice
Water
High Protein Option - Firm Tofu, Cooked Chicken, Tempeh etc
Grated Beetroot
Avocado
Sweet Peppers
Cucumber
Spinach
Tomatoes
Baby Sweetcorn
Black Sesame Seeds

Recipe

1) Mix 1 tbsp nutritional yeast with 50 ml water and juice from 1/2 a lemon to make a paste and pour over cubed firm tofu/cooked chicken/tempeh coating each cube.

2) Add this to a base of spinach, baby sweetcorn, tomatoes, cucumber, avocado, sweet peppers & grated beetroot.

3) Sprinkle with black sesame seeds and your choice of healthy dressing or condiment (click here to see options).

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
