Ingredients

1 Tin Reduced Fat Coconut Milk

200g High Protein Option - Firm Tofu, Cooked Chicken, Tempeh etc

200g Spinach

200g Green Tomatoes

1 Large Courgette

25g Fresh Coriander Leaves

25g Fresh Mint Leaves

1 tbsp Pureed Garlic

1 tsp Turmeric

3 tsp Garam Masala

2 tsp Ground Cumin

1 tsp Chilli Powder

Recipe

1) Place all ingredients into a large pan on the hob on a high heat. Stir until fully combined and bring to the boil.

2) Reduce heat to low and cook for 15 mins. Use a hand blender to half of the mixture to thicken the sauce.

3) Enjoy your tikka masala with some whole-grain rice such as brown rice or wild rice, or another cooked grain and some fresh salad.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
