Feel Good Falafel
This recipe makes 10-12 depending on the size of your falafel.
Ingredients
250g Cooked Quinoa
250g Cooked Chickpeas
1 Small Chopped White Onion
40g Fresh Spinach Leaves
Handful Fresh Parsley
4 tsp Ground Coriander
3 tsp Ground Cumin
2 tsp Pureed Garlic
1/4 tsp Black Pepper
Recipe
1) Pre-heat the oven to 180C/350F.
2) Place all ingredients into food processor and blend until fully combined and the mixture comes together well.
3) Spoon out a large handful of the mixture and shape into a ball. Place the ball of mixture onto a non-stick baking tray. If your mixture seems far too wet to start shaping, then add a tablespoon of flour (any kind) to the blender and mix further. Keep doing this until the mixture seems a little more solid.
4) Complete making all falafel and place in the oven on the tray for 25 mins. Turn your falafel over and continue to cook in the oven for up to another 25 mins or until the outside is crispy. You could also cook these in an air fryer with no oil needed.
5) Remove from the oven and place your falafel in a whole-grain pitta, wrap, on your salad or just as a side option with mezze or tapas. You can also add a dressing, sauce or other condiment of your choice - see our dressings, sauces and condiments recipes for ideas.
Top Tips
If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen fruit or veg when you don’t have the fresh option.
