Roast Vegetable Pasta Sauce

This easy pasta sauce recipe will make a small tub, but feel free to increase quantities as necessary to keep plenty to hand in your fridge.

You can also freeze it in ice cube trays for future use to save time and effort later.

Feel free to use frozen veg/fruit/herbs etc in any of my recipes if you don’t have fresh options.

Ingredients

200g Fresh Tomatoes or 1 tin 400g Chopped Tomatoes
1 Red/Yellow/Orange Sweet Pepper
1 Small Sweet Potato
50ml Water
1 tbsp Garlic
Sprinkle of Black Pepper

Recipe

1) Bake sweet potato (skin on), pepper and tomatoes in the oven or microwave until fully cooked through and soft.

2) Add cooked veg, plus the garlic, pepper and water into a blender. Blend until smooth or to the desired consistency. Add more water if the consistency is too thick for your liking.

Enjoy your sauce over the top of your pasta or other healthy meals.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
