Ingredients

20g Chia Seeds
75ml Reduced Fat Coconut Milk
75ml Water
1 tsp Lemon Juice
100g Raspberries

Recipe

1) Place chia seeds in a container.

2) Add coconut milk and water. Stir until the chia seeds are fully mixed in. Leave for 10 mins before stirring again and then put in the fridge for another 10 mins.

3) Place 75g raspberries in another container. Use a hand blender to blend until lots of raspberry puree is created, leaving a few chunks for added texture.

4) Add raspberry puree to the bottom of your dessert bowl or glass container, top with your set chia mixture from the fridge. Add the remaining raspberries on the top and a few fresh mint leaves if desired.

You can use frozen raspberries if you don’t have fresh. Just defrost at room temperature or briefly in the microwave.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
