Sweet Potato Chocolate Pudding

This delicious dessert recipe makes 2 portions. You’ll need to bake 1 large sweet potato before making this dessert.

Ingredients

1 Large Baked Sweet Potato
1 Banana
2 tbsp Cacao Powder
1 tbsp Desiccated Coconut (optional)

Recipe

1) Place baked sweet potato (ideally skin left on for added fibre and texture), cacao powder and banana in a food processor or high speed blender. Blend until fully combined and it has formed a smooth consistency.

2) Add a little water if the mixture seems too solid and is not blending properly.

Enjoy your sweet potato chocolate pudding topped with an extra sprinkle of cacao powder or desiccated coconut if you wish.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
