Creamy Rice Pudding

This delicious dessert recipe makes 2 portions.

Ingredients

50g Arborio Rice
200ml Water
200ml Milk (any kind, including oat, soya, almond etc)
4 Dates
1/2 tsp Ground Cinnamon (Optional)

Recipe

1) Place uncooked rice, water & milk in a pan on the hob. Heat until it starts to boil, then turn down to a low setting and simmer until rice is well cooked, very soft and creamy.

2) Add more water or milk if mixture seems too solid.

3) Soak dates in 50ml hot water for a while until softened. Place dates and hot water in a blender and blend until you have made a date paste.

4) Add date paste to the rice pudding and stir it in until fully combined.

Enjoy your rice pudding with a sprinkling of ground cinnamon on top if you wish.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
