Blueberry Muffins
Ingredients
200g Spelt Flour (You could use other whole grain flours such as wholemeal or oat)
60g Almond Flour (Ground Almonds)
1 tbsp Ground Flaxseed
180ml Milk (any kind, including oat, soya, almond etc)
5 Dates (chop into small pieces & soak in 50ml hot water)
1 tbsp Apple Cider Vinegar
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
Large Handful of Blueberries (fresh or frozen)
Recipe
1) Preheat the oven to 170C. Line a muffin tin with 10-12 paper liners or you could use a silicon muffin tray mould.
2) Combine all of the dry ingredients in one bowl (flours, flaxseed, baking powder & bicarbonate of soda) and all of the wet ingredients in another (milk, dates & apple cider vinegar. Stir the ingredients in both bowls until well mixed.
2) Add the wet ingredients to the dry and stir thoroughly until fully combined.
3) Add the handful of blueberries and stir through the mixture.
4) Spoon the mixture out evenly into your cupcake moulds.
5) Bake for 30-40 mins until a skewer comes out of the muffins clean.
6) Remove cupcakes and allow to cool.
Enjoy your blueberry muffins with a cup of tea or one of our healthy drinks such as a homemade turmeric latte.
Top Tips
If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen fruit or veg when you don’t have the fresh option.
