Fruit cake Tower

Want a healthy alternative to a traditional celebration cake or just a bit of fun for a dessert idea for all the family? Why not try this easy option that not only looks good, but tastes great too.

Ingredients

Large Melon (any will be fine, but watermelon works well)
Pineapple
Kiwis
Strawberries
Blueberries
Raspberries
Figs
Long wooden or metal skewers
You can choose alternative fruits to any of those listed, we just find these worked well and they are fruits we liked.

Recipe

1) Cut the skins off the melon, pineapple and kiwis. Chop the melon and pineapple into thick chunks and the kiwi into thinner rounds. Cut the kiwi rounds into halves. Make sure you leave some pineapple and use it to cut out two star shapes for decorating later (you could use a star shaped cutter or just use a knife).

2) Arrange the melon and pineapple by stacking them alternately on top of each other. Then secure them in place by putting 2 or 3 long skewers through each layer from top to bottom with the tops of the skewers sticking out of the top.

3) Place the kiwi halves around each melon layer to make it look more decorative.

4) Thread raspberries and blueberries (or other smaller fruits like grapes) onto the remaining exposed skewers and top with the pineapple stars.

5) Chop the remaining fruit such as strawberries and figs, then decorate around the top and bottom of the tower with any fruit you have.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
