Fancy something more savoury as your breakfast option?
Why not try this delicious, filling, low fat & healthy scrambled tofu recipe?

Ingredients

300g Silken Tofu (You can choose firm tofu if you prefer a chunkier texture)
1/2 tsp Turmeric
1/2 tsp Black Salt (also known as Kala Namak)
Sprinkle of Black Pepper (Optional)
Slice of Wholegrain Bread/Rye Bread (Optional)

Recipe (makes 2 portions)

1) Place tofu, turmeric, black salt & black pepper in a jug or microwavable container.
2) Stir & then heat in the microwave for 2 minutes.
3) Taste your scrambled tofu and add additional black salt & pepper if you prefer a stronger flavour. Heat for longer until it reaches desired temperature.
4) Enjoy your scrambled tofu on its own, on wholegrain toast or with some wholegrain/rye bread on the side. 
5) You can add some additional toppings such as avocado/guacamole, mixed salad leaves, tomatoes, spinach or have it as part of a healthy brunch.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
