Pea & Spinach Soup

Serves: 4

Ingredients

1000ml Vegetable Stock (see our homemade recipe)

150g Green Peas

1 Large White Potato

2 Chopped Carrots

1 Small White Onion

2 Sticks Celery

Large Handful of Spinach or Leafy Greens

30g Cashew Nuts (option to leave out cashew cream)

4 tbsp Pureed/Chopped Garlic

1 tsp Ground Black Pepper

Recipe

1) Place cashew nuts in a container with 200ml of hot water. Leave to soak and soften for 15 mins.

2) In a large pan on the hob, place the potatoes and carrots (chopped with skin on) with the chopped celery and vegetable stock. Cook on a medium heat until the veg is softened.

3) Add the chopped onion, peas, garlic, pepper and chopped spinach/greens.

4) Bring to the boil, stir and then leave to simmer for 10 mins.

5) Using a blender (hand blender or high speed blender of any kind) blend the water and cashew nuts until smooth.

6) Use a hand blender to blend up your soup in the pot. Add the cashew cream and serve up hot. Alternatively, leave it to go cold and eat it gazpacho-style on a hot day!

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
