Ingredients

A Few Handfuls of Watercress

A Few Handfuls of Fresh Spinach Leaves

200g Cooked Lentils (any other cooked bean or grain would be fine)

100g Fresh Beetroot

1 Small Apple

1 Small Pear

Smoked Paprika

Lemon Juice

Black Pepper

Recipe

1) Chop the beetroot, apple and pear into small chunks. Place them in a bowl with the cooked lentils.

2) Mix together 1/2 tsp smoked paprika and the juice from 1/2 a lemon to make a dressing.

3) Arrange the spinach leaves and watercress on a plate and add the contents of the bowl on top.

4) Add the dressing, plus an extra sprinkling of smoked paprika over the top if you like the taste, plus a sprinkle of cracked black pepper.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
