Guacamole

This easy recipe is enough to make a small tub of guacamole, but feel free to increase quantities as necessary to keep plenty to hand in your fridge.

You can also freeze it for future use to save time and effort later.

Feel free to use frozen veg/fruit/herbs etc in any of my recipes if you don’t have fresh options.

Ingredients

2 Ripened Avocados
1 Large Ripe Tomato (or a few small tomatoes)
2 tbsp Lemon Juice
1 Small Red Onion (or half a large onion)
Small Handful Fresh Coriander
1 Small Red Chilli (Optional)

Recipe

1) Roughly chop the avocado, tomato, onion, coriander and chilli (if using) into chunks.

2) Place all ingredients in a blender. Blend until fully combined and smooth or to required consistency if you prefer it chunky.

Enjoy your guacamole with a salad/side dish or other healthy meals.

Top Tips

If there are any ingredients that you do not like in any of my recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit/veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg for essential added fibre and nutrition.
