Manderin Chia Pudding

Ingredients

20g Chia Seeds
75ml Reduced Fat Coconut Milk
75ml Water
1 tsp Lemon Juice
1 Large or 2 Small Mandarin (if unavailable use an orange, clementine, satsuma etc instead)

Recipe

1) Place chia seeds in a dessert glass/bowl/container.

2) Add coconut milk and water. Stir until the chia seeds and fully mixed in. Place in the fridge for 10 mins before stirring again and then putting back in the fridge for another 10 mins.

3) Peel mandarin and place all segments into a separate container. Use a hand blender to blend until lots of mandarin puree is created, leaving a few chunks for added texture.

4) Add mandarin puree on top of the chia pudding once it is set in the fridge.

You can use frozen or tinned mandarin if you don’t have fresh. Just defrost at room temperature or briefly in the microwave.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
