Healthy Blueberry Ice Cream

This delicious dessert recipe makes 2 portions. You’ll need to pre-peel, chop and freeze the banana before attempting this recipe.

Ingredients

2 Large Ripe Bananas (Chopped & Frozen)
Water
100g Fresh or Frozen Blueberries

Recipe

1) Place chopped frozen banana in a powerful food processor or high speed blender. Blend until fully combined and has formed a smooth consistency.

2) Add a small amount of water if mixture seems too solid and is not blending properly.

3) Add 3/4 of the blueberries into the banana mixture and pulse the blender/food processor a few times to get some of the blueberries mixed in, leaving the banana mixture marbled with blueberry.

Enjoy your blueberry ice-cream topped with the remaining blueberries.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
