SOBA Noodle Soup

Ingredients

1500ml Vegetable Stock (see our homemade recipe)

200g Soba Noodles (or whole wheat noodles would be fine)

200g Mushrooms

2 Chopped Carrots

3 Spring Onion

Handful of Spinach or Leafy Greens E.g Collard Greens

2 tbsp Liquid Aminos (or light soy sauce)

1 tbsp Pureed Garlic

1 tbsp Pureed Ginger

1 tbsp Sesame Seeds

Fresh Chilli Slices (optional)

Squeeze of Lime (optional)

Recipe

1) In a large pan on the hob, place the garlic, ginger, liquid aminos, onion, carrots and 200ml water. Cook on a medium heat until a paste is formed, the onions are starting to cook down and the carrots are softened.

2) Slice the spring onions and mushrooms, then add all other ingredients to the pan, leaving the noodles until last after stirring in all other ingredients.

3) Bring to the boil and then leave to simmer for 10 mins.

4) When the noodles are cooked through, spoon out your soup and garnish with a few more sesame seeds, thin slices of fresh chilli, a squeeze of lime juice and some more chopped spring onion if desired.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
