One Pot Veg Korma

Ingredients

100g raw cashews
1 onion, chopped
1 tbsp puréed garlic
1 tbsp grated fresh ginger
¼ tsp ground cinnamon
Handful of fresh green beans - cut into ½ inch pieces
2 carrots - cut into ¼ inch thick slices
1 medium white or sweet potato - cut into small cubes
1 red/green/yellow bell pepper - sliced
Handful of green peas
¼ tsp ground turmeric
¼ tsp ground coriander
¼ tsp ground cumin
⅛ tsp cayenne pepper
1 tbsp lime juice
200ml water

Recipe

1) Place the cashew nuts in a container and cover with 250ml hot water. Let them soak for at least 20 mins.

2) Place all of the other ingredients into a slow cooker, pressure cooker or a large pot on the hob with the lid on. Make sure you stir and combine all of the ingredients before putting the lid on and cooking on a low-medium heat until the veg is cooked through.

3) Add more water if it starts to dry out, but by keeping the lid on, you should retain most of the moisture from the veg.

4) Whilst the veg and spices are cooking, use a hand blender or high speed blender to blend the cashew nuts and water mixture until it is smooth and creamy.

5) Once the veg is cooked to your liking, add the creamy cashew sauce and stir in thoroughly until all of the veg is coated.

6) Serve with some additional fresh salad and/or whole grains such as red/wild/brown rice, bulgur, quinoa or buckwheat. You could also add a sprinkle of desiccated coconut, ground almonds or a handful of fresh coriander.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
