Warm Spiced Stuffed Apples
This delicious dessert recipe makes 2 portions.
Ingredients
2 Large Apples
40g Oats
50ml Warm Water
4 Pitted Medjool Dates
20g Walnuts
1/2 tsp Ground Cinnamon
Recipe
1) Pre-heat the oven to 180C/250F. Core the apples and place on a non-stick baking tray in the oven for 15 mins (or microwave until softened).
2) Place the pitted dates into a container with the warm water. Leave to soak for 10 mins.
3) Put the date/water mixture along with all of the other ingredients into a food processor/high speed blender and pulse several times until the mixture starts to come together and the dates and walnuts have been broken down into smaller pieces.
4) Remove the tray with the apples from the oven (or microwave) and spoon the mixture from the blender into the centre of the cored apples. Make sure you leave the apples on the tray to form a seal on the bottom, so the mixture does not escape.
5) Place the tray back into the oven and cook for a further 10 mins or longer until the apples are soft all the way through. You can also continue to cook in the microwave, but you just won’t get that crispy topping texture).
Enjoy your warm spiced stuffed apples with some additional date paste and a sprinkling of crushed walnuts if you wish.
Top Tips
If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen fruit or veg when you don’t have the fresh option.
