BBQ pulled mushroom pittas

Serves 2

Ingredients

2 Wholemeal Pittas

Tomato Passata

200g Mushrooms (ideally oyster mushrooms)

1 Small Courgette (chopped into small pieces)

1 Bell pepper (chopped into small pieces)

1 teaspoon Smoked paprika

1/4 teaspoon Cayenne pepper

1 tablespoon olive or rapeseed oil

2 tablespoons BBQ Sauce (see our homemade recipe or choose shop a more natural bought option such as Dr Will’s)

Directions

1) Shred the oyster mushrooms using 2 forks to shred the stems and caps into rough pieces.

2) Place mushrooms into a bowl along with the oil, cayenne pepper & smoked paprika.

3) Spread out the mushrooms in the oven on a baking tray on parchment paper or in an air fryer. Cook on a high heat until slightly crispy.

4) At the same time add the chopped courgette & pepper to a microwaveable container with the tomato passata, mix and cook on a high heat until they start to go a little soft.

5) Remove the mushrooms from the oven or air fryer and add the BBQ sauce.

6) Heat the pittas in a toaster for a couple of minutes until they start to puff up. Open the pittas and stuff them with the veg and mushrooms.

7) Add some fresh salad items such as tomato, lettuce, spinach or a homemade coleslaw.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
